Pig Out

It was supposed to be just another food shoot. My friend took me to La Loma, the lechon capital of Manila, to take photos for a blog feature. A staple during feasts and celebrations in the Philippines, lechon is a whole pig roasted slowly for hours over burning charcoal. What would have been an appetizing experience turned somewhat grim after we went inside the slaughter house. Grim as it may be, it didn't stop us from enjoying a few chunks of the sumptuous crispy skin before we left. My friend even brought some home.

Workers taking the hair off the skin of a dead calf after dunking it in a
tub of boiling water.

Skewered pigs left on the slaughter house floor.

Happy New Year!

I will spare you the details of my resolutions. There is still a substantial amount of alcohol in my brain, so I actually don't have the inclination to write anything. I just wanted to wish you all a HAPPY NEW YEAR!
